Fresh from the mountains of southern Mexico, this new-crop lot hails from the Altos region of Chiapas, a place that has long been a cornerstone of Mexican specialty coffee.

Rather than coming from a single farm, this lot celebrates a whole community of smallholder growers, among them Mario Santiz Lopez of Finca Vista Hermosa. These family farms dot the highlands, where volcanic soil and cool mountain air do much of the work. The high altitude slows the ripening of each cherry, giving the beans extra density and depth, which is exactly what the SHG (Strictly High Grown) label promises. The lot combines both washed and sun-dried coffees, pairing the clarity of washed processing with the extra sweetness and body that sun-drying brings. Add European Preparation sorting, which removes defects by hand and machine, and you get a cup that's clean and dependable from bag to bag.
